40 students from the Zhonghua Vocationary Chef School in Shanghai made 8374 sushi pieces which took up 20,13 square meters. The record was approved by Ms. Angela Wu on behalf of the Guinness Book of Records on October 15 at 16:03 local time in Shanghai.
Here's a time-lapse video of the six-hour process.
